Eggplant over Rice

Stir-fried eggplant in a sweet/salty/spicy sauce* with green onions and cabbage over Jasmine rice. 

*Blend rice vinegar, honey, soy sauce, hot chili sauce, oil, fresh grated ginger, and pressed garlic, then add a little bit of cornstarch.
